About the Recipe
The perfect sauce for grilled fish.
3 egg yolks
2 tbsp lemon juice
1-2 tbsp liquid dill
25 g cold butter
A pinch of sugar
Salt & Pepper
Whisk the egg yolks, lemon juice, and liquid dill together in a small sauce pan. Slowly heat the micture and stir constantly. When warm, graduatly beat in the butter.
When the right temperature and consistency has been reached - NB: No more than 60 °C, season the sauce with salt, pebber, and sugar.
The sauce goes well with asparagus or grilled fish with small potatoes.
